In the picture below is a refractometer. Refractometers measure the nutritional content by "refracting" or bending light through the juice of a fruit, vegetable or plant. The more dissolved natural sugars, minerals and other nutrients are in the fruit, the more dense the juice is and higher the number that the refractometer shows. This is commonly called the "brix" reading.

Refractometers are not new, they have been used in the wine and orange juice industry for many years to determine the quality of the fruit before it is picked.

No matter what a tomato looks like you can't be sure it's good for you unless you know what the "brix" is. Many people have never even tasted a high brix tomato. You can't imagine how good they taste.

Refractometers are easy to use, even for an inexperienced operator. To make a reading, place 2 to 3 drops of the liquid sample on the prism surface, close the cover & point toward any light source. Focus the eyepiece and note the number where the blue and white meet. Here is a chart with the brix numbers of a few fruits, grasses and vegetables that has been developed.

You do not need a refractometer to measure taste or grow high brix vegetables you just need the right nutrients to create healthy soil which in turn creates healthy plants and fruit.

Within a given species of plant, the crop with the higher refractive index (or "Brix") will have a higher sugar content, higher mineral content, and a greater specific gravity or density. This adds up to a sweeter tasting, more minerally nutritious food (maximum nutritional value) with lower nitrate, lower water content and better storage attributes.

Crops with higher Brix are more resistant to insects due to the increased natural sugar in the sap. Sugars ferment inside the insect and become toxic because insects do not have a pancreas to regulate sugars. For insect resistance, maintain a Brix of 12 or higher in the juice of the leaves of most plants. Crops with a higher solids content will have a lower freezing point & therefore be less prone to frost damage.

Higher brix plants are healthy and strong and have more energy to fight off bugs with natural defenses. Each type of plant has a different method of keeping insects away. Corn, for instance produces paraffin wax on it's leaves which is a effective barrier for insects. Weak corn plants are not able to produce as much paraffin wax and are more resistant to these creatures.

No Weeds
Weeds do not like healthy mineral balanced soil. Weeds prefer soils with an imbalance of minerals, especially where pesticides and herbicides have been used in the past.

High Brix vegetables and fruits have a higher density of minerals and contain less water. This lowers the freezing point and makes your plants and fruits less susceptible to early frosts.
